Chickpea Banana bars

School Safe refined sugar free
Chickpea Banana bars.


After a few requests from my kids teachers at daycaee for a chickpea based school friendly snack I came up with these. (remove walnuts from topping for school safe version)
Chickpea Banana Bars

Wet:

1 Can chickpeas (drained and rinsed)
1/4 Cup Tahini
1/4 Cup Maple syrup
2 Ripe Bananas

Dry:

1/2 Cup whole wheat flour
1 Cup steal cut oats
1/2 Tablespoon baking powder
1/8 Teaspoon cinnamon
Pinch of Salt
1/2 Cup chocolate chips

Topping:

1/2 Cup maple syrup
1/2 Cup steal cut oats
1 Tablespoon Cacao Nibs
1/2 Teaspoon Caroube Powdwe
1/2 Cup steel cut oats

Directions:

Preheat oven to 350 degrees.
In blender or food processor, blend all wet ingredients until smooth.
Add all dry ingredients to a medium large mixing bowl, give a quick stir.
Add wet ingredients to dry ingredients, stir to combine.
Transfer to 9×9 baking dish.
Make topping by combining all toping ingredients to a small bowl and mixing.
Transfer topping to chickpea banana mixture in baking dish.
Bake 20-30 minutes until edges slightly start to brown.
