Crowd-Pleasing Greek Style Cold Pasta Salad
This cold pasta is a great make-ahead dish that is a crowd pleaser and is great for barbeques, potlucks or taking to the beach.
1 large pasta (900g) of choice boiled in salted water
1 Cup extra-virgin olive oil
1 Cup red wine vinegar
1 1/2 Tablespoon sugar
1/8 Cup fresh basil (about 12 leaves minced)
1 Teaspoon dry oregano
2 Teaspoons garlic powder
1/2 Red pepper chopped
1/2 yellow pepper chopped
20 + Cherry tomatoes cut in half
8 Sundried tomatoes diced (oil packed)
1/2 Purple onion diced small
3 Green onion chopped
Salt and pepper to taste
- In a mason jar combine olive oil, vinegar, sugar, basil, oregano, garlic powder.
- Shake to combine.
- Add the cooked pasta to a large bowl.
- Combine all ingredients.
- Coat with dressing from the mason jar.
- Season with salt and pepper.
