Kale Tabbouleh wannabe salad.


2 Cups kale
1 Tomato
1 Red onion
1 Medium lemon
1/4 Cup of bulgur
1/8 Cup extra virgin olive oil
1 Teaspoon salt
1/4 Teaspoon ground allspice
1 Teaspoon Sumac
White pepper to taste
4 Small Mint leaves optional


Directions :

  1. Chop all ingredients to the desired size (remove all stems or hard veins). place tomatoes salt and bulgar together to allow the bulgur to soak up the juice and become tender.
  2. Add lemon oil and spices
  3. mix.
  4. Taste, adjust if more lemon or salt or spice to taste is needed.

*Baby kale has less of the bitter kale taste, all kale works depending on preference.
