2 tablespoons miso paste (Brown here.. any colour works)
4 cups water
1 block ramen noodles
4 baby bok choy (base removed and leaves separated)
2 small carrots
1 tablespoon parsley
2 large white mushrooms sliced
1 small potato chopped (optional)
1 shallot for garnish (optional)
Pepper to taste (optional)
- In a medium sauce pan bring water to a boil, add the miso paste and stir until dissolved.
- Lower the heat to medium, high. Add the potato and cook for 2 minutes.
- Add the noodles cook for 2 minutes.
Add the remaining veggies. Cook until noodles are soft and your veggies are to the desired tenderness.
