1 ½ Tablespoons Yeast (2 packs)
½ cup sugar
¼ Cup warm water
3 Cups White flour
3 Cups spelt flour
¼ cup Vital wheat Gluten (optional, if not using add additional ¼ cup of flour of choice)
2 Teaspoons salt
2 Tablespoons oil or vegan butter melted
½ Cup molasses
2 Cups Warm water
1 Teaspoon oats (optional)
Extra flour for dusting
1a.In a medium sized bowl add yeast sugar and ¼ cup of warm water stir and set aside.
b.Let sit for 5- 10 minutes until yeast activates.
2.a. In a second medium sized bowl combine melted butter or oil, warm water and molasses.
2.b. Mix to combine
3.a. Combine your white flour, Spelt flour and salt in a large glass bowl or base of stand mixer and give a quick stir. (kneed attachment?)
3.b. Make a hole in the center and Add risen yeast mixture, and molasses mixture to flour.
3.c. Kneed on low speed until mixture starts to combine. Increase kneed speed to medium and kneed for 4-8 minutes. (If you are not using a stand mixer, use a wooden spoon and begin to combine, when it starts to get stiff start using your hands. Kneed for 2 minutes in the bowl. Transfer to a lightly floured surface kneed until dough is a bit elastic but not stiff)
3. d. Lightly oil glass bowl and cover with a warm damp cloth for 30 minutes – 2hours.
3.e. Punch dough down.
3.f. Shape into 2 loaves on baking sheets.
3.g. Cover and allow to rise again for 1 hour.
3.h. Sprinkle loaves with oats and dust with a bit of flour
3.i. Score the top of your bread with a sharp knife.
3.j. Bake at 350 degrees for 30-45 minutes until the outside starts to turn brown.
