Vegan Chocolate, Oreo, Banana Cheesecake

Ingredients:

Base:

1 Pack Oreo cookies (family size 523 g remove 10 cookies 5 for topping 4 for inside and one for eating)
1/4 Cup vegan margarine, melted.

Directions:

  1. In a food processor add the whole oreo cookie (don’t forget to set some on the side).
  2. Pulse until it becomes fine.
  3. Add melted margarine and pulse to combine.
  4. Pour into a 9′ cheesecake pan.
  5. Spread evenly across the bottom and press down firmly.
  6. Place in freezer.
  7. Make your filling.

Banana Cheesecake (white layer)
Ingredients:


1 1/2 Cups raw cashews soaked overnight (can boil for 15 min)
1/2 Cup coconut yogurt
1 Large over-ripe banana
1/4 Cup maple syrup
1/2 Lemon juiced
1 Tablespoon refined coconut oil, melted
1 Tablespoon nutritional yeast (optional)
1 Teaspoon vanilla extract
1/4 Teaspoon salt

4 Oreos each cut/ broken into 4


Directions:
In blender. puree all ingredients until smooth and no chunks remain.
Remove base from freezer add banana cheesecake filling.
Tap it gently on the counter to remove any air bubbles.
Sprinkle Oreo chunks over banana cheesecake.
Lightly push the Oreos down with your fingers.
Tap again to ensure no air bubbles.
place in the freezer for 4+ hours (overnight is best)

Solid chocolate layer (optional)
Ingredients:

1 Cup vegan chocolate chips
1 Tablespoon refined coconut oil


Directions:

  1. In an oven-safe bowl add chocolate chips and coconut oil 
  2. Microwave on high for 1 minute.
  3. Stir if fully melted pour over top of banana cheesecake/ oreo layer. (if not melted microwave for another 30 seconds. stir)
  4. The chocolate should solidify almost immediately as you pour it onto the frozen banana cheesecake.
  5. Place in freezer while you make the chocolate cheesecake top

 

Chocolate Cheesecake top.

Ingredients:

2 Cups raw cashews soaked overnight (can boil for 15 min)
1/2 Cup coconut yogurt (i used silk plain coconut)
1/2 Cup cocoa powder
1/2 Cup pure maple syrup
2 Tablespoon refined coconut oil, melted
1 Tablespoon nutritional yeast (optional)
1 Teaspoon vanilla extract
1/4 Teaspoon salt

1 Teaspoon mini chocolate chips (optional)
5 Oreo cookies cut in half (optional)

Directions:

  1. In a blender, blend all ingredients until smooth(not the mini chocolate chips or Oreos)
  2. Take out the cheesecake from the freezer and add the final layer of chocolate cheesecake.
  3. Sprinkle with mini chocolate chips and Oreos.
  4. Place back and Freezer and chill for 2-4 hours.

Keep in freezer until ready to serve.
