Vegan Mozzarella that Melts


2/3 Cup Refined coconut oil (melted not hot)
1/2 Lemon Juice
1 Cup Soymilk (unsweet)
1/4 Cup Tapioca flour
4 Teaspoons Kappa Carrageenan
2 Teaspoons Salt


  1. Place all ingredients in a blender and mix well about 40 seconds. (hand blender works best unless you have a heavy duty blender)
  2. Add blended ingredients to a small pot and stir constantly with a spatula over medium heat until it becomes a bit thick.
  3. Remove from heat and transfer to a mold right away.
  4. Let cool.


*you will know your cheese is ready when it starts to move away from the sides of the pot.

*The difference between coconut oil and refined coconut oil taste wise is that coconut oil still taste like coconut where refined does not.
