here is what you will need to make this awesome pizza.
1 batch home made pesto…
1 store bought or home made vegan whole wheat crust.
3 medium sised button mushrooms sliced.
4 or 5 oil packed sundried tomatoes, sliced
1/4 Red onion, sliced
1/4 red pepper sliced
2 Tablespoons pine nuts.
Now for the good stuff here is the pesto recipe!!!! this pesto also works fantastic in pasta or spread on toast.
2 Cups fresh Basil
1/2 Cup oil
1/4 Cup nutritional yeast
1 Tablespoon white miso paste
1/4 Cup ground almonds or almond flour + 1 tablespoon
salt and pepper to taste.
*optional add 1 garlic clove
Blend all ingredients with electric hand blender. add 1 tablespoon ground almonds and stir.
Preheat oven to 400 degrees
Spread pesto on vegan whole wheat crust
top with sliced mushrooms, sundried tomatoes, onions, red pepper and pine nuts.
bake until the cegetables start to brown a bit and dough slightly changes colour about 15 – 30 minutes.
