Vegan Three Bean Chili


2 Tablespoons olive oil
2 Onions, chopped
1/2 Green pepper, chopped
1/2 Red pepper, chopped
1/2 Multicolor pepper (can sub yellow or orange pepper)
1 Small jalapeno, chopped small
2 Cups white mushrooms (about 12 mushrooms) chopped

1 Tablespoon HP sauce
2 Cans tomato sauce

2 Tablespoons cumin
2 Tablespoons chili powder
1/2 Teaspoon basil
1 Teaspoon salt
1/2 Teaspoon white pepper
2 Teaspoon smoked spanish paprika

1 Can kidney beans, drained and rinsed
1 Can black beans, drained and rinsed
1 Can navy beans or white beans drained and rinsed
1/2 Cup corn about 1 1/2 fresh corn cut off the cob
1 Tomato diced (optional)
2 Cans water (tomatoes sauce cans)
1 Tablespoon cornstarch (optional)


  1. In a large pot, heat olive oil at medium heat.
  2. Add onions, peppers and mushrooms. 
  3. Saute until onion is soft.
  4. Add remaining ingredients. 
  5. Stir.
  6. Cover and reduce heat to medium-low.
  7. Cook for 30 minutes. Stirring every 5 minutes.

    Serve hot garnish with cilantro.
